The Special Proteins in Sweet Potato Tuber—Sporamin

Abstract: Sporamin proteins are a kind of special storage proteins that are expressed in the root tuber of sweet potato. They not only have the characteristics of general storage proteins, but also have the activity of Kunitz_type trypsin inhibitor. Morever, they may be involved in the tuber's formation. In this article, we review th e studies on sporamin proteins in recent years, including their characterization, researches on the genes which encode these proteins, and the regulation of expression of these genes.
